Carson Family Farm is a first-generation farm in the Blue Ridge Mountains of North Carolina. Owned and operated by John and Callie Carson, we are a family owned small business that offers dry-aged Angus beef directly to consumers. Our beef is processed at a USDA inspected facility, dry-aged, and then flash frozen and vacuum sealed.
All our beef is pastured, which means animals are raised on grass, and offered grain for finishing. This provides the health and nutritional benefits of grassfed, and the flavor profile and tenderness of traditionally grainfed animals. Our farm utilizes regenerative grazing practices including rotational grazing, planting annual grasses, maintaining pollinator friendly habitats, and fencing out creeks and streams.
Carson Family Farm holds our NCDA Certified Meat Handler’s License, and Beef Quality Assurance (BQA) certifications for low stress animal handling. We are members of the NC and American Angus Associations, Got 2BE NC program, NC Farm Bureau, and the NC Cattlemen’s Association.
Most recently, we began offering tallow products made from rendered suet from our processed beef. Utilizing the whole animal is a way to honor each animal that processed.
