A small, fast growing mimosoid tree that is endemic to Mexico and Central America is called Leucaena Leucocephala. It produces edible young pods and seeds. They are a common ingredient in several dishes in Mexico, such as Oaxmole, Sopa de Guajes, and Tacos de Huevo con Guaje. Locally it is known as guaje, peladera, liliaque, guache oaje, or oaxe. In addition, the name of the Mexican state of Oaxaca comes from the Nahuatl word huaxyacac, which is also the name of a species of tree that grows near Oaxaca City called Leucaena Leucocephala.
